This Banana Nut Bread Recipe uses wholemeal bread flour and wheatgerm. It also uses raisins and has a rich crunchy texture and is delicious with butter and marmalade.

I prefer to make it for afternoon tea rather than breakfast especially if you have guests to entertain. Give it a shot!

Ingredients.


  • 1 and 1/2 cups of wholemeal flour
  • 2 teaspoons baking powder
  • 1 cup wheatgerm
  • 1/2 cup caster/granulated sugar
  • 1 and 1/2 cups raisins
  • 125g butter, melted
  • 1 and 1/4 cups milk
  • 2 eggs, lightly beaten
  • 1 cup mashed bananas
  • 1/4 cup roasted peanuts


Preparation.


1. Sift flour and baking powder into a large bowl, mix in wheatgerm, sugar and raisins.

2. Stir in butter, milk, eggs and bananas.

3. Pour into square loaf pan, sprinkle with chopped peanuts. Bake in moderate oven for 1 hours 20 Recipe.

  • 1 teaspoon vanilla essence

  • 3/4 cup self-raising flour
  • 3/4 cup plain flour
  • 1/2 teaspoon baking powder
  • 3/4 cup chopped walnuts



Preparation:


1. Grease 2 loaf pans.

2. Cream butter, essence and sugar in a bowl with electric mixer until light and fluffy.

3. Add eggs and beat until combined.

4. Stir in half the bananas with half the sifted dry ingredients and half the walnuts.

5. After that, stir in remainder of the bananas, dry ingredients and walnuts; stir until combined.

6. Pour mixture into pans and bake in moderate oven for 50 minutes.

7. When cooked, let the bread cool for 5 minutes and turn on a rack.

I have to admit that the first time I baked a bread, I used a bread machine! Not something to be proud of for a serious baker! BUT it was amazing at how easy it was...just a matter of assembling everything in the right order into the loaf pan and letting it bake.

So... Here's a very easy and straightforward Banana Bread Recipe to try. It is very tasty and looks impressive considering that it is made in a bread machine.

Banana Loaf Recipe.


Ingredients.


  •  250g wholemeal flour
  • 250 bread flour
  • 300 ml water
  • 2 teaspoon sugar
  • 1 and 1/2 teaspoon salt
  • 1 and 1/2 teaspoon yeast
  • 30 ml oil (use either olive oil or sunflower oil)
  • 1 cup mashed bananas
  • 4 teaspoon powdered buttermilk
  • 2 teaspoon lemon juice.


Preparation.


1.Pour the water into the bottom of the bread machine loaf pan. Follow with the lemon juice and mashed banana.

2. Very very carefully scoop the flours into loaf pan. The flour will make a mound over the water but will not sink too much.

3. Make a slight concave hole in the middle of the flour but being careful that it doesn't expose the liquid at the bottom. Place the yeast into the hole.

4. Place the sugar, salt, buttermilk, oil separately at the four corners of the loaf pan being careful to ensure it doesn't mix or touch each other.

5. Fix the loaf pan into the bread machine and adjust it to Level 6 and bake for approximately 3 and a half hours.

NOTE: This Loaf will come out rather heavy and rich due to the Banana. Variation.

If you do not have a bread machine, you can always mix all the ingredients together in a big bowl and knead it into a dough.

Cover the bowl with a muslin cloth and set aside for 2 hours to let it rise.

Then bake for 45 minutes in a moderate oven.

Makes 1 Loaf.

  • 7 oz (200 g) plain flour
  • 1 and 1/4 tsp baking powder
  • 1/2 teaspoon salt

  • 115g caster sugar
  • 1/4 grated lemon zest
  • 3 ripe Bananas, mashed
  • 2 eggs, beaten.

Preparation.

1. Preheat a 350 degree F/180 degree C/Gas 4 oven. Grease and flour a loaf tin.

2. Sift flour, baking powder, salt and cinnamon, if using, into a bowl. Stir in wheat germ.

3. In another bowl, combine butter with sugar and lemon zest. Beat until the mixture is fluffy and light .

4. Add the mashed Bananas and eggs. Mix Well.

  • 1 LARGE Banana or 3 medium-sized Bananas
  • 4 oz (115 g) butter, at room temperature
  • 5 1/2 oz (150 g) caster sugar
  • 2 eggs, at room temperature
  • 7 1/2 oz (215 g) plain flour
  • 1 teaspoon salt
  • 1 teaspoon soda bicarbonate
  • 1/2 teaspoon grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 6 fl oz (175 ml) soured cream
  • 1 teaspoon vanilla essence.
  • FOR THE GLAZE.
  • 4 oz (115 g) sugar
  • 1-2 tablespoon lemon juice.


Preparations.


1. Preheat a 350 Fahrenheit/ 180 Celsius, Gas 4 oven.

2. Mash the Banana in a bowl, set aside.

3. Use an electric mixer and cream the butter and sugar until fluffy. Add the eggs, beating to blend well after each addition.

4. Sift together the flour, salt, soda bicarbonate, nutmeg, allspice and cloves. Add it to the butter mixture and stir until combined.

5. Add the cream, Banana and vanilla and blend until smooth.

6. Pour into a prepared buttered or well-oiled tin.

7. Bake until the top is springy when touched gently for approximately 45-50 minutes. Let cool in the pan for 16 minutes, then turn onto a wire rack to cool completely.

8. As for the glaze, combine the icing sugar and lemon juice until smooth. Place the loaf on a plate and gently pour the glaze evenly over the loaf and allow to set.

9. Serve with coffee or tea.

  • 3 large ripe Bananas
  • 1 tsp vanilla essence
  • 2 oz (55g) chopped walnuts.


PREPARATIONS.


1. Preheat a 350 Fahrenheit/180 Celsius/ Gas 4 Oven.

2. Grease a loaf tin well and set aside.

3. With an electric mixer, cream the butter and sugar together until light and fluffy.

4. Add the eggs, one at a time and beat well after each addition.

5. sift the plain flour, soda bicarbonate, salt and cinnamon over the butter mixture and stir to blend.

6. Once mixture is smooth, stir in the wholewheat flour.

7. Stir the mashed Bananas into the mixture, followed by the vanilla essence and nuts.

8. Pour the mixture into the prepared pan and spread evenly.

9. Bake until a skewer inserted comes out clean, about 50-60 minutes. Let stand for 15 minutes before transferring to a wire rack to cool completely.

This amazing Banana Bread Recipe baked with cardamom is soft and delicious especially when served warm at tea-time with butter and jam.

Ingredients.


Makes 1 Loaf.

  • 1/4 pint (150ml) warm water
  • 1 teaspoon (5 ml) dried yeast
  • pinch of sugar
  • 10 cardamom pods
  • 14 oz (400 g) strong white flour
  • 1 teaspoon (5 ml) salt
  • 2 tablespoon (30 ml) malt extract
  • 2 ripe Bananas,mashed
  • 1 teaspoon (5 ml) sesame seeds.


Preparation.


1. Pour warm water into a bowl. Sprinkle the yeast, add sugar and mix well. Leave for 10 minutes.

2. Split the cardamom pods. Remove seeds and chop finely.

3. Sift the flour and salt into a mixing bowl, make a well in the centre. Add yeast mixture, the malt extract, chopped cardamom seeds and Bananas.

4. Slowly add the flour and mix into a soft dough. Add extra water if required.

5. Knead until well combined. Transfer the dough to a floured surface and knead for a further 5 minutes.

6. Put the dough back into the clean bowl, cover with a damp cloth/towel and leave it to rise for 2 hours until it is double in size.

7. Shape the bread as desired, place on a baking sheet, cover the cloth again and let it rise.

8. Grease/Butter a baking sheet. Preheat the oven to 220 degree Celsius or 425 degree Fanrenheit.

9.Brush bread with water, sprinkle with sesame seeds, place in a 450 g (1 lb) loaf tin and bake for 10 minutes, lower oven's temperature to 200 degree Celsius or 400 degree Fanrenheit.

10. Continue baking for another 20 minutes until loaf sounds hollow when tapped.


Banana Ginger Tea Bread

Ingredients.

Makes 1 Loaf.

  • 6 oz (175 g) self-raising flour
  • 1 teaspoon (5 ml) baking powder
  • 1 and 1/2 oz (40 g) softened butter
  • 2 oz (50 g) dark muscovado sugar, if unavailable, substitute with brown sugar
  • 2 oz (50 g) drained stem ginger, chopped
  • 4 tablespoon (60 ml) skimmed milk
  • 2 over ripe Bananas, mashed


Preparation.


1. Preheat oven to 180 degree Celsius/360 degree Fahrenheit. Grease and line a loaf tin -- 1 lb (450g) tin.

2. Sift flour and baking powder and mix well.

3. Rub in the softened butter until mixture resembles breadcrumbs.

4. Stir in sugar. Add ginger, milk and mashed Bananas and mix well.

5. Pour gently into the prepared greased loaf tin and bake for 40- 45 minutes or until an inserted skewer or tooth pick comes out clean.

6. Remove from oven, gently loosen the sides and turn over onto a wire rack. Leave to cool completely.
